Ingredients

Instructions

Cookie Dough:

  1. Preheat the oven to 350 degrees F and line cookie sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Using a mixer, beat the butter, sugar, and cake batter flavor for approximately 3 minutes until light and fluffy.
  4. Add the aquafaba and continue mixing until combined. Scrape sides of bowl to be sure it mixes completely.
  5. Slowly add in the flour mixture and continue mixing on low until combined and dough forms.
  6. Using a 1/4 cup scoop, scoop the dough and roll into balls. Press down lightly to flatten the dough.
  7. Refrigerate the dough for approximately 10 minutes.
  8. Bake the cookies at 350 degrees F for approximately 10 to 12 minutes.

Frosting:

  1. Using a mixer, beat the cream cheese and butter together until combined.
  2. While mixing, slowly add the powdered sugar and continue mixing until combined.
  3. Add vanilla extract and continue mixing for approximately 3 minutes.
  4. Once cookies have baked and cooled completely, add the icing to the cookies.

Optional:

  1. Melt white chocolate chips in the microwave for approximately 30 seconds. Stir and add red food coloring.
  2. Once cooled, drizzle the white chocolate over the cookies.
  3. Add green sprinkles. Serve and enjoy!

Recipe Notes

  • Cake batter flavoring is essential as it gives the cake flavor for the cookie.
  • Cake Flour is preferred of all-purpose flour as it gives the cookie a softer and lighter texture, making it more cake like.
  • The cookie dough will be slightly sticky when rolling, this is ok!
  • Do not skip refrigerating the dough!! It helps the cookies maintain their overall shape.
  • The white chocolate and sprinkles are completely optional to give the cookies the original Christmas Tree Cake appearance.
