Butterscotch flavored ice cream blended perfectly with a butterscotch syrup that takes this ice cream to a whole new level. No ice cream maker needed!

If you are a butterscotch lover then this ice cream is for you! I also HIGHLY recommend trying my recipe for Butterbeer Cookies. Both recipes would be a perfect addition to any Harry Potter themed celebration.

This ice cream recipe is super simple and easy. There is no ice cream maker needed and only a handful of ingredients required!

INGREDIENTS FOR BUTTERBEER ICE CREAM

Heavy Whipping Cream: This is what gives the no churn ice cream the light texture. You'll want to whip it up for about 2-3 minutes until stiff peaks form. You can do this with a hand mixer or electric mixer.

Sweetened Condensed Milk: This adds the sweetness you need for the the most perfect homemade ice cream. You will slowly add this in as you stir lightly.

Vanilla Extract: This will give you the vanilla flavor you need for all homemade ice creams. It gives you the perfect vanilla base ice cream while enhancing the butterscotch flavor.

Instant Butterscotch Pudding Mix: This is what gives this butterscotch no churn ice cream the PERFECT flavor. You will mix this with the sweetened condensed milk in a separate bowl before slowly adding it into the whipped heavy cream.

I have added a homemade butterscotch syrup to the recipe if you want to take your butterbeer ice cream to the next level! You can either layer your ice cream with drizzles of this syrup before freezing or save it for a topping when you are ready to serve. Either way, you can't go wrong adding this syrup!

INGREDIENTS FOR BUTTERSCOTCH SYRUP

Heavy Whipping Cream: You will add 1/4 cup of heavy whipping cream to the bowl with your baking chips. This will enhance the flavor and give the syrup a perfectly smooth texture.

Butterscotch Baking Chips/Morsels: While you can choose to make your own butterscotch, I decided to take it the easy way and just buy some butterscotch baking chips!

Whether you are a Harry Potter fan or simply a butterscotch loving muggle, this butterscotch flavored ice cream will have you under a spell.

Ingredients

  • 2 cups heavy whipping cream, dairy-free
  • 2 tsp vanilla extract
  • 1 pkg (3.5oz) instant butterscotch pudding mix
  • 1- 14oz sweetened condensed milk (dairy-free homemade)

Optional: Butterscotch syrup

  • 1 cup butterscotch baking chips
  • 1/4 cup heavy whipping cream

Instructions

  1. In a medium bowl, combine the can of sweetened condensed milk and butterscotch pudding mix. Set aside.
  2. In another bowl, whip the heavy whipping cream until stiff peaks form. Slowly add the condensed milk mixture while stirring. Add vanilla extract and mix until combined.
  3. If using butterscotch syrup: Using a microwaveable bowl, heat the butterscotch baking chips and 1/4 cup heavy whipping cream in 30 second intervals, stirring each time, until completely smooth. Allow to cool slightly.
  4. Pour ice cream mixture into a bread pan or dish and freeze for about 5 hours or until set. If using butterscotch syrup in ice cream, pour ice cream in layers while adding swirls of butterscotch syrup.

Recipe Notes

The butterscotch syrup is optional. If you opt to use it, you can use the butterscotch syrup either within the ice cream or simply as a topping.

If using the syrup within the ice cream, be sure to do a layer of ice cream then using a spoon, lightly drizzle the syrup then layer with more ice cream. The syrup will harden slightly after freezing so make sure that you drizzle lightly or it will be too thick.

Be sure to only use the pudding mix; you do not make the pudding. You simply mix the powder with the sweetened condensed milk. This gives your ice cream the perfect butterscotch taste!
