Have you traveled to the Harry Potter World at Universal Florida?! I went on a bachelorette trip to Universal for my best friend a couple of years ago. It is truly what all witches and wizards dream of. Muggles are welcome too! If you have visited the Wizarding World, then you've had a hot, cold, or frozen butterbeer. If you didn't, then you seriously missed out!


Butterbeer is a staple drink in the Harry Potter books by J.K. Rowling. She describes the drink with such detail that you can almost taste it while you read! Students from Hogwarts would buy this drink at the Three Broomsticks on their trips to Hogsmeade. The drink is said to contain the slightest alcohol content. Of course, Universal's version does not contain any alcohol.


I have dreamed of that butterscotch flavor ever since. This year as Harry Potter's birthday, which is July 31st, drew closer, I had the idea to turn this drink into a cookie. A soft and chewy cookie with butterscotch flavor that made you want to send an owl to all your friends and family!


I have worked on a chocolate chip pudding cookie recipe for years, which I plan to add to the blog soon! I knew this was the recipe I could transform to give this cookie the perfect butterscotch flavor. Pudding mixes are the best way to add flavor to baked goods. You don't need to do anything with the pudding mix other than adding it to the mixture.


So for this cookie, I added butterscotch pudding mix and butterscotch morsels. The double butterscotch flavor isn't overwhelming and is exactly how J.K. Rowling would describe it as, "a little bit like less-sickly butterscotch." I decided to add white chocolate morsels to give it a slightly creamy, vanilla flavor that you would get with the whipped topping from a typical butterbeer.

Ingredients

  • 2 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1 cup unsalted dairy-free butter (2 sticks)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 pkg. (3.5oz) instant butterscotch pudding mix
  • 2 flaxseed eggs or 1/3 cup aquafaba
  • 1 tsp vanilla extract
  • 1 cup butterscotch baking chips
  • 1 cup white chocolate baking chips

Instructions

  1. Preheat oven to 350 degrees F and line baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk flour and baking soda. Set aside.
  3. In a small bowl, mix flaxseed egg according to instructions. Mix 2 tbsp flaxseed with 6 tbsp water. Set aside.
  4. With a mixer, cream together the butter and sugars until light and fluffy. Add box pudding mix and mix until combined. Add vanilla extract and flax eggs. Mix until combined.
  5. Slowly add the flour mixture until just combined. Fold in all baking chips. Dough will be thick and slightly sticky. Use 1/4 cup to measure out dough and roll into balls. Place on baking sheet and bake for 10-12 minutes or until lightly browned on bottom.

Recipe Notes

  • Do not overmix the dough, mix until just combined.
  • Cookies will look underbaked in the center but they will continue baking for a few minutes after removing them from the oven.
  • If using dairy-free, make sure baking chips are dairy-free.
  • To make this a standard recipe: use 2 eggs in place of the flaxseed eggs, and use regular unsalted butter. Bake time will remain the same.
