Ingredients

  • 4 tbsp dairy-free butter, melted
  • 1/4 cup vegetable oil
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 ripe bananas
  • 1 1/2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup dairy-free milk
  • 1 1/2 tsp vinegar
  • 2 tsp baking powder
  • 2 tsp cornstarch
  • 1/2 tsp salt
  • 1 cup dairy-free mini chocolate chips
  • optional: additional granulated sugar and mini chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F. Grease a 9x5 inch loaf pan and set aside.
  2. In a large mixing bowl, mash the ripe bananas until they are smooth. Add in the melted dairy-free butter, vegetable oil, light brown sugar, and granulated sugar. Mix well until combined.
  3. Stir in the vanilla extract.
  4. In a separate bowl, mix together the all-purpose flour, baking powder, cornstarch, and salt. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  5. In a small bowl, mix together the dairy-free milk and vinegar. Gradually add this to the banana mixture, mixing until just combined.
  6. Fold in the dairy-free mini chocolate chips.
  7. Pour the batter into the prepared loaf pan. If desired, sprinkle additional granulated sugar and mini chocolate chips on top.
  8. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  9. Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then, remove the loaf from the pan and transfer it to a wire rack to cool completely.
  10. Slice and serve warm with a smear of dairy-free butter, if desired. Enjoy your delicious and guilt-free dairy and egg-free chocolate chip banana bread!
