Cinnamon Roll Muffins: A Delicious Twist on a Classic Breakfast Treat

Are you a fan of cinnamon rolls but looking for a quicker, more portable option? Look no further than these cinnamon roll muffins! These muffins are the perfect combination of a soft and fluffy muffin with a gooey, cinnamon-sugar filling and a creamy cream cheese glaze.

To make the muffins, start by mixing together the melted butter, vegetable oil, light brown sugar, and granulated sugar. Next, add in the mashed bananas and vanilla extract. In a separate bowl, mix together the all-purpose flour, baking powder, cornstarch, and salt. Slowly add the dry ingredients to the wet ingredients, alternating with the dairy-free milk and vinegar.

For the cinnamon filling, mix together the melted butter, light brown sugar, cinnamon, ginger, and nutmeg. Once the muffin batter is prepared, spoon a small amount into the bottom of each muffin cup. Add a spoonful of the cinnamon filling on top of the batter. Then, add the remaining batter on top of the filling.

Bake the muffins at 350 degrees Fahrenheit for 18-20 minutes, or until a toothpick inserted into the center comes out clean. While the muffins are baking, prepare the cream cheese glaze by mixing together the softened butter, cream cheese, powdered sugar, and vanilla extract. Once the muffins have cooled, drizzle the cream cheese glaze on top.

These cinnamon roll muffins are perfect for a grab-and-go breakfast or as a sweet treat. They're also a great option for those following a dairy-free diet. Enjoy them warm with a cup of coffee or tea for the ultimate breakfast experience.
