Peaches have to be my favorite thing about the summer months. They have the perfect amount of sweetness to add to any recipe. You can use peaches in so many different ways, simply grilling peaches, baking them in pies, and best of all, cobblers.


There are so many different ways to make a peach cobbler. So which way is the right way?! Well, it can all matter on personal preference. I prefer plenty of cinnamon and a tender yet crunchy biscuit on top of the sweet peach filling. But I also wanted it to be egg and dairy-free. While it took some practice getting the vegan biscuit to turn out just right, I've finally found the perfect texture and taste that your friends and family won't even know it's vegan!


HOW TO MAKE VEGAN PEACH COBBLER

For a peach cobbler, you will need to make the filling and then the biscuit topping.

For the filling, you'll need:

⦁ peaches (pitted and sliced)

⦁ sugar

⦁ cinnamon

⦁ nutmeg

⦁ vanilla extract

⦁ vegan butter


You will cut up the vegan butter into cubes in a 9x13 baking dish and place it in the preheating oven to melt. Then add the sliced peaches, cinnamon, sugar, nutmeg, and vanilla extract to the baking dish and mix it up so that the peaches are completely covered. Add this back into the oven for 5 minutes.

For the biscuit topping, you'll need:

⦁ vegan butter

⦁ granulated sugar

⦁ brown sugar

⦁ vanilla extract

⦁ dairy-free milk

⦁ all-purpose flour

⦁ baking powder

⦁ salt

For the dough, you will cream the butter and sugars together until light and fluffy. Then add the dairy-free milk and vanilla extract. Slowly add the flour, baking powder, and salt. Mix until just combined. It will be a very sticky dough, but that's ok! You'll add the biscuit dough, by the spoonful, on top of the peach filling. While this is optional, I like to sprinkle some cinnamon and sugar over the dough to give it that slight crunch. Bake in the oven and enjoy it fresh and warm with some ice cream!

Ingredients

Filling:

  • 2lbs of fresh peaches (6-7 peaches)
  • 1/3 cup sugar
  • 1 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 cup dairy free/plant butter, melted

Batter:

  • 3/4 cup dairy free/plant butter
  • 1/2 cup sugar
  • 1/2 brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/4 cup dairy free milk (I used almond milk)
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees F and spray 9x13 dish. Cut 1/4 cup butter into cubes and place in dish. Allow to melt in the oven.
  2. Thinly slice 2 lbs of fresh peaches and remove pits. Place in dish. Add sugar, cinnamon, nutmeg, and vanilla extract over peaches and stir until all peaches are completely coated. Place in oven for 5 minutes.
  3. For the batter: in a medium bowl, whisk the flour, baking powder and salt. Set aside.
  4. In a mixer using the paddle attachment, beat butter, sugar and brown sugar until light and fluffy. Add vanilla extract and almond milk and mix until combined.
  5. With the mixer on low, slowly add the flour mixture to butter mixture. Dough will form and it will be sticky.
  6. Place dough in spoonfuls over the peaches. Sprinkle sugar and cinnamon over the dough (optional).
  7. Bake in oven for 30-35 minutes. Dough top will be slightly crunchy and peach mixture will be bubbling. Remove from oven and allow to cool for about 15 minutes.
  8. Best served while warm and with your choice of dairy free ice cream.

Recipe Notes

  • The amount of sugar and cinnamon is up to you! If you do not like as much cinnamon or sugar for taste then decrease the amount slightly, it will still taste delicious.
  • The sprinkle of cinnamon and sugar on the dough topping is optional but I think it adds extra flavor overall and gives the dough the perfect crunch on top.
  • Fresh peaches are preferred but not necessary. If using canned, drain from liquid and allow to dry before using.
  • Peeling the peaches: this is also optional but I don't mind the peel. If you would like to remove the peel then boil water and place peaches in water for no more than 10 seconds and this will allow the skin to be removed easily.
