Vegan Coca-Cola Bundt Cake
This super moist and tender chocolate cake is flavored using Coca-Cola. Top it off with a chocolate Coca-Cola glaze. It is a rendition of the old-fashioned southern Coca-Cola cake to make it egg and dairy-free.
If you are or have ever lived in the South, you have probably heard of the Coca-Cola cake. While I had heard of it, I never knew why it was popular to add Coke products to the cake. After some research, this all began around the time of World War II. Coca-Cola replaced sugar due to rationing during the war, and so began the southern Coca-Cola cake tradition.
I found countless renditions of the Coca-Cola cake in my Grandmother's old recipes. Typically, it comes in the form of a sheet cake. But I had the idea to transform it into a bundt cake. I truly love how simple and beautiful a bundt cake is.
From all the recipes I found, I worked on making this cake egg and dairy-free. I exchanged standard butter for dairy-free butter and used almond milk and vinegar rather than eggs and buttermilk.
To top off this moist and light chocolate cake is a delicious chocolate coke glaze. You'll want to make this glaze the night before so that it thickens in the refrigerator. Simply pour the glaze on your cake after it cools. Enjoy!
