If you are or have ever lived in the South, you have probably heard of the Coca-Cola cake. While I had heard of it, I never knew why it was popular to add Coke products to the cake. After some research, this all began around the time of World War II. Coca-Cola replaced sugar due to rationing during the war, and so began the southern Coca-Cola cake tradition.


I found countless renditions of the Coca-Cola cake in my Grandmother's old recipes. Typically, it comes in the form of a sheet cake. But I had the idea to transform it into a bundt cake. I truly love how simple and beautiful a bundt cake is.



From all the recipes I found, I worked on making this cake egg and dairy-free. I exchanged standard butter for dairy-free butter and used almond milk and vinegar rather than eggs and buttermilk.


To top off this moist and light chocolate cake is a delicious chocolate coke glaze. You'll want to make this glaze the night before so that it thickens in the refrigerator. Simply pour the glaze on your cake after it cools. Enjoy!

Ingredients

  • 2 1/4 cups sugar
  • 1 cup dairy free/plant butter (2 sticks)
  • 1 cup Coca-Cola
  • 1/4 cup cocoa powder
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Almond milk
  • 1/2 cup vegetable oil
  • 2 tbsp vinegar
  • 1 1/2 tsp vanilla extract

Glaze:

  • 1/2 cup Coca-Cola
  • 1/4 cup dairy free/plant butter
  • 1/4 cup cocoa powder
  • 2 cups powdered sugar (measured and sifted)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees F and prepare bundt pan by spraying with nonstick spray.
  2. In a medium-size saucepan, combine sugar, coca-cola, cocoa powder and dairy free butter over medium heat. Stir until smooth and once all the sugar is dissolved and butter melted.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Add the almond milk, vegetable oil, vinegar, and vanilla extract, and cola mixture.
  4. Mix all ingredients until just combined. You don't want to overmix.
  5. Pour mixture into prepared bundt pan. Bake for approximately 35-40 minutes or until a toothpick comes out with just a few moist crumbs.

For the Glaze:

  1. In a medium-size saucepan, combine coca-cola, butter and cocoa powder over medium heat. Stir until combined and remove from heat.
  2. Mix in the powdered sugar (sifted) until there are no clumps remaining.
  3. The mixture will be very thin. Place in an air-tight container and refrigerate. The longer the glaze sits in the fridge the more time it has to thicken. You can prepare glaze the night before for best results.

Recipe Notes

  • For the glaze, it would be best to make this the night before baking the cake to allow more time to thicken.
  • This recipe could also be used in a 9x13 pan. Bake at 350 degrees F for 25-30 minutes.
