While the dough is rising, prepare the chocolate filling. In a saucepan, melt together 1/2 cup of dairy-free butter, 4 oz of dairy-free chocolate, 4 tbsp of cocoa powder, 2 tbsp of brown sugar, 1/2 cup of powdered sugar, and 1/8 tsp of ground cinnamon. Mix until smooth and set aside.

Once the dough has risen, roll it out into a rectangle. Spread the chocolate filling evenly over the dough, leaving a small border around the edges. Roll the dough up tightly, like a jelly roll, and place it in a greased loaf pan. Allow the loaf to rise for another 30 minutes.

Ingredients

Bread:

  • 2 tsp instant yeast
  • 2 tbsp light brown sugar

  • 1/3 cup dairy-free butter
  • 3/4 cup dairy-free milk
  • 1/2 cup applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups bread flour
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt

Chocolate Filling:

  • 1/2 cup dairy-free butter
  • 4 oz dairy-free chocolate
  • 4 tbsp cocoa powder
  • 2 tbsp brown sugar
  • 1/2 cup powdered sugar
  • 1/8 tsp ground cinnamon

Sugar Glaze:

  • 6 tbsp granulated
  • 1/4 cup water

  12. While the babka is baking, prepare the sugar glaze by mixing together 6 tbsp of granulated sugar and 1/4 cup of water.
  13. Once the babka is done baking, brush the glaze over the top. Allow the babka to cool before slicing and serving.
