While I do not personally have issues with gluten, I know several people close to me that do. So I love when I find the time to test out gluten-free recipes because it is not always as simple as exchanging the flour for gluten-free flour. Gluten-free can tend to leave baked goods dry and crumbly. We certainly do not want that! That's why I love how moist these brownies are.


Zucchini is such a wonderful vegetable that can be added to desserts and bread. Check out this Double Chocolate Zucchini Banana Bread recipe. Zucchini is packed full of moisture and is great when pairing with a gluten-free recipe. It adds moisture back into these brownies and makes them a healthy dessert option.

Gluten-free Vegan Zucchini Brownies

Ingredients

  • 1 1/2 cups of Gluten-free 1:1 all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup cocoa powder (can use regular or dark)
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/8 tsp ground cinnamon
  • 1 cup Almond milk (or any dairy free milk)
  • 1/2 cup vegetable oil
  • 1 tbsp vinegar or apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup of zucchini, grated and drained

Instructions

  1. Preheat oven to 350 degrees F and prepare an 8x8 in pan by spraying with nonstick spray or line with parchment paper.
  2. Grate fresh zucchini to measure out to one cup. Wrap it up and squeeze excess water and set aside to dry.
  3. In a medium bowl, sift together the flour, cocoa powder, baking soda, salt, and cinnamon.
  4. In a mixer with the paddle attachment, beat together the oil and sugars. Add almond milk and vanilla extract. Mix until combined, it will be very watery.
  5. Slowly add flour mixture while mixing on low until just combined. Do not overmix. Fold in grated zucchini.
  6. Pour into 8x8 baking dish/pan and bake for about 35-40 minutes. Allow to cool for about 10 minutes before removing. Enjoy!
